EASY BANANA CHOCOLATE MUFFINS

So today…what to with your ripe bananas before they go bad?

Ingredients

2 cups Self Raising Flour
1/2 cup – Sugar
2 Eggs
2 cups – Milk
125g – Butter (melted)
3 Ripe Bananas
Cooking Chocolate (grated)

  • Mix the Self Raising Flour and Sugar (dry ingredients) in a bowl.
  • Create a well in the dry mixture and add all other ingredients.
  • Mix ingredients but ensure not to over do it. The mixture should remain lumpy.
  • Warm up oven at 350 degrees.
  • Put cupcake liners into the muffin baking tin and fill each up with mixture.
  • Pop into the oven for 40 minutes.

This recipe makes 12 muffins.

Freshly baked muffins can keep well for about a week in the fridge.
